1.5 oz Cut Above zero-proof Gin
1 SaySo Dirty Martini stick
2 oz. cold water
Dropper of lemon thyme bitters
POSHI green olives
Instructions
In a shaker with ice, add Cut Above, SaySo, water and bitters. Shake vigorously, then strain into a chilled martini glass. Garnish with 3 olives threaded on a cocktail pick.

3 oz. chilled Freixnet sparkling NA wine
¼ - ½ oz. Sweethaven Apple Thyme Cardamon
Dropper of lemon thyme bitters
Optional: 1-2 oz. chilled sparkling water for a lighter version.
Instructions
In a mixing glass filled with ice, gently stir Freixenet, Sweethaven, bitters (and sparkling water if using) to chill while preserving bubbles. Strain into a champagne flute and garnish with a sprig of thyme or a lemon peel.
